A small-parcel Champagne from Celles-sur-Ource, Aube, Cote des Bar. Elegant, yet rich with delicate red fruit and hazelnut notes and long finish. Fine first class bubbles of the single 2022 vintage harvested on the 29th of August.

Vineyard. Agroforestry method with permanent soil cover of rye, clover, and native grasses to foster biodiversity.

Grape: Pinot Noir

Winemaking. Fermented with native yeasts and aged in old Burgundian oak barrels for 6 months. Unfiltered and unfined. After 18 months on the lees, the wine is disgorged with a dosage of 5g per litre, making it an excellent Extra Brut Blanc de Noirs Champagne.

Tirage: June 2023

Disgorged: November 2024

Crafted by Matthieu Dangin who along side his Burgundy vineyards manages a microplot of 20 ares in Champagne, making him the smallest Champagne producer. His Champagne production amounts to only a few barrels per year.

Celles-sur-Ource, Aube, Cote des Bar, Champage, France.
