A blend of 80% Malvasia di Candia grapes and 20% Trebbiano grapes sourced from estate-owned vineyards ranging in age from 35 to 45 years. Manual harvest in September followed by direct press. Spontaneous fermentation in fibreglass. No clarification, no filtration. The racking and bottling are done according to lunar phases.Â
Colleformica is a tiny, family-run artisan winery located in Velletri, in the Castelli Romani region of Lazio, approximately 45 km south of Rome. Managed by father and son duo Sergio and Paolo Bombetti, the estate focuses on low-intervention, natural winemaking on land their family has farmed for over a century.
