Grapes are grown near the village of Nikolaevo in Rose Valley, Lower Balkan region of Bulgaria on the soil that is mainly clay mixed with limestone. De-stemmed and lightly crushed, the berries are macerated for 2 hours and then gently pressed. Made with native yeasts, fermented in temperature-controlled 300 liter stainless-steel and 400 liter old oak casks. Aged on the lees in casks for 5 months gaining character and forming structure.
