A blend of Sauvignon blanc 35%, Gewurztraminer 25%, Chardonnay 20%, Feteasca Regala 20%. Certified organic agriculture. Fermented spontaneously, no fining, no filtering. Chardonnay fermented on skin with "sandwich method" - whole bunches between crushed grapes. Skin maceration of other grapes from 3 days to 3 weeks depending on the grape variety, 8 months aging in 500 litres Hungarian oak barrels.
The name of the wine Ösztövér (or Eztuer as it was first written in the past) stands for the original name of the Kisújfalu village where the wine is made. Ösztövér means poor or dry when referring to a land, dry or dried up when referring to a well or spring, poor or rarely populated when referring to an area. The village lies in a hot and dry microclimate with plants typicly found in areas with sub Mediterranean climate.
