Dark, inky, almost black wine. Blueberry jam, plum, forest fruit, laurel and liquorice aromatics. Incredibly concentrated deep flavours, thik and tannic power red.

Drink on its own as a meditation wine or pare with rich, spicy, meaty dishes or old cheeses.

Alc. 14,5%

Organic agriculture, hand harvested, fermeted with native yeasts, low intervention, unfined, unfiltered, vegan. Fermented and aged in different qvevris, with wine moved by gravity force due to a multiterrace system in the wine cellar.

Sometimes high in alcohol (16% for the 2019 vintage) due to a rare yeast Saccharomyces Oviformis with alcohol tolerance  of between 16% and 21%. In its natural form, this yeast lives in organic vineyards of a handful of winemaking regions around the world including Papari Valley's vineyard of 9,3 hectares.

Winemaker Shalva Kurdadze.

Papari valley, Village Akhasheni, Gurjaani Municipality, Kakheti, eastern Georgia.
