Cloudy with remarkable bright coral/salmon colour. Vineyard peaches, roasted chestnut, toast and white pepper aromatics. Complex minerality and refreshing acidity. Slightly salty and pleasantly bitter in the finish. Challenging and versatile as a food companion! No sulphur added!
Try it with a spicy asian or perfumed middle eastern recipes or with some fine charcuterie.
Grape: Grauburgunder (Pinot Gris) from a single Geigenmantel vineyard.
Soil/terroir: loamy loess soils with red sandstone subsoil on a southern slope
Harvest and vinification: manual harvest with berry sorting at cool temperatures on fruit days according to the lunar calendar. 20 hours of skin contact, extremely long pressing time with very low pressure, spontaneous fermentation in stainless steel, spontaneous malolactic fermentation, no fining, no filtration, no sulphure addition.
