Grape: 100% Shavkapito, a rare, ancient indigenous Georgian red grape that originates from the central Gori region.
Fermented with native wild yeasts on the skins in a buried qvevri for 7–12 days, followed by malolactic fermentation and further aging in the clay amphora for 6 to 10 months. Unfiltered, made with minimal intervention.
